Humba-bababa

( photo grabbed )

Some of my friends , was asking me how to cook Humba in Kagay-anon way . I've tasted humba cooked in different ways already and I say ! our way is better "nyahahahha" don't throw that bottle now ...

I've learned to cook humba from Mama and Tatay ( mom and father ) so here it is : oh, we often used salted black bean and the pork tummy parts is the best because 1/2 lean and 1/2 fat.

1 kilo pork liempo- cut up to serving size, heat up a heavy casserole or a pan and cook meat till the oil comes out.Drain the oil and sautee about garlic cloves, shallots, and add the meat, add the black bean, soy-sauce,pinch of sugar, vinegar, salt and pepper to taste and simmer until it get tende. Enjoy.
